Chicken marinade 
1. 1.5- 2 pounds chicken thighs 
2. Juice of 1 1/2 lime 
3. 2 tablespoon honey 
4. 2 tablespoon olive oil 
5. 3 garlic minced 
6. 1/2 teaspoon salt , black pepper, 1 teaspoon each onion powder, paprika, cumin, cayenne, 1/2 teaspoon chili flakes 
7. 2 tablespoons cilantro chopped 

Cooked white rice 

Spinach Salad 
2 cups spinach 
1/2 cup tomato diced 
2 tablespoons cup sliced onion 
2 tablespoons olive w
1 large garlic minced 
1/4 teaspoon salt 
Few squeezes of lemon juice 

1. Cook some rice. 
2. Mix the chicken marinade ingredients and set aside 1/4 cup if the marinade for basting the chicken . 
3. Marinade the chicken thighs in listed ingredients.

Here’s how I make my chicken thighs: Ingredients (makes 4) -4 skin on boneless chicken thighs (you can do bone-in for even juicier but the cooking time will be longer) -seasoning: I did 1/2 tbsp garlic powder, 1/2 tbsp onion powder, 1/2 tbsp smoked paprika, 1/2 tsp oregano, 1/2 tsp Salt, 1/4 tsp Black pepper -1/2 tbsp baking powder (mine is aluminum-free) Method: 1.
