Wicked Wellbeing - So, have you still not taken the plunge yet to actually buy some tofu and try it? Honestly, it's so good, quick, easy, cheap and so so tasty! My husband said a couple of times last night how much he enjoyed this curry... Red Tofu Curry on Quinoa (serves 2) 1 T oil 1-2 t red curry paste (depending how hot you want it) 1 large clove garlic, finely crushed 1 t finely sliced fresh ginger 2 kaffir lime leaves, spine removed and finely sliced 1 small stalk of lemon grass, finely sliced (I buy it frozen from my local asian store) 1 kumara, scrubbed and cut into small chunks 1 T oil 1 block firm tofu, cut into chunks 1 c chicken stock 1 c Ceres Organics coconut cream 1 small courgette, sliced 1/2 red pepper, sliced 1/2 yellow pepper, sliced 1/2 t Ceres Organics sea salt a good grinding of black pepper juice of 1 fresh lime fresh coriander, finely chopped 1/2 c Ceres Organics quinoa Heat the first measure of oil in a pot, add the red curry paste, garlic and ginger. Cook for 1 minute. Stir in the kaffir lime leaves, kumara and the lemongrass and stir to combine. Add the chicken stock and the coconut cream and gently bring to the boil and then turn down to simmer, covered for 20 minutes or until kumara is tender. Add the quinoa to a pot with 1 cup of water, bring to the boil and then simmer for 10 minutes. In the mean time, heat the second measure of oil in a wok and add the tofu and cook until browned on all sides and slightly crispy. This will take about 4-5 minutes. Drain onto a paper towel. Once the kumara is cooked, add the courgette, juice of the lime, red and yellow pepper, the tofu and salt and pepper to the curry and cook for a further 2-3 minutes until hot. Serve over the bed of quinoa and garnish with freshly chopped coriander. So I dare you? Comment on this post if you're going to try it! | Facebook

Wicked Wellbeing - Last night I experimented with Gerrys Wraps as I was dying to know if the family would notice the difference between the bases being gluten free... and the result was really positive! I made simple pizza's for the kids and our a bit more gourmet... I have to say, very, very impressed, they had a really crunchy texture that wasn't soggy in the middle like some wraps when making pizzas. So I'd definitely recommend giving them a go!
