THE BEST VEGAN BACON RECIPE🌱🥓 Ingredients 1 package of smoked tofu 2 tbsp olive oil 2 tbsp maple syrup 2 tbsp soy sauce 1 tbsp sriracha 1 tbsp corn starch Method 1. Preheat your oven to 425F. 2. In a large bowl, combine olive oil, maple syrup, soy sauce, sriracha and corn starch. 3. Using a peeler, peel your smoked tofu into the marinade. This is key to get really thin strips! I prefer a Y shaped peeler. Toss the smoked tofu gently to evenly coat in the marinade. 4. Place the smoked tofu on a parchment lined baking sheet and bake for 10 minutes. Flip the tofu around and bake for another 5-10 minutes. It should be crispy at this point, not burnt so watch carefully. Remove and let cool slightly and enjoy as is, on a BLT, Caesar salad or wherever you enjoy bacon!

Ingredients: For the sweet potato mash: 1kg softened sweet potatoes, either roasted or peeled, cubed, and boiled until soft. 3 tbsp cashew cream (blend 60g soaked cashews, juice of one lemon, 2 tbsp nooch, 1/2 tsp of salt, 2 cloves garlic, splash of water to loosen) Salt and pepper For the bean mix: 1 onion, diced 5 cloves garlic 2 tsp smoked paprika 3 tbsp tomato puree 1 tbsp tamari or soy sauce 500g black beans 240g kidney beans 240g cooked brown or puy lentils, drained and rinsed if from a can 2 bay leaves 350ml vegetable stock 2 sprigs fresh rosemary 2 sprigs fresh thyme Salt and pepper 600g finely chopped mushrooms, I used a mix 1 tbsp lemon juice Salt, pepper, olive oil by @sophsplantkitchen
