The secret to exceptional balsamic vinegar? Time. The Giusti family, Italy’s oldest balsamic producer, has made award-winning vinegars since 1605. Time is their secret ingredient. Pressed grape must is slow-cooked for 14 hours before ageing – longer cooking makes a balsamic with more complex flavours. Barrels dating back to the 18th century are still used, giving complex wood aromas to every bottle. If it’s not quite right, the blend is refined until they have a product they’re proud to sell.
