Being able to write this cookbook was a dream come true for me; an opportunity to share my food with New Zealand that I never thought I'd have. Eggplant Parmigiana. This dish is based on the Parmigiana I made on Masterchef, which Simon Gault called one of the best vegetarian dishes he'd ever tasted. In summer when tomatoes are in abundance (and affordable!), I'll use fresh ones for those recipe, but in winter it's perfectly fine to use canned - the soup will taste just as good. Nana's Caramel Slice. I love anything with caramel in it, and this recipe from my Nana's archives is definitely one to keep on hand. The biscuit base stays lovely and soft and crumbly. So many of the other slices I've tried have a hard crunchy base, but I much prefer it delicate and buttery like this. Thanks Nana, lots of love!
