So we are not going to steam it. No, no. We're not going to boil it. No, no. We are going to make it crispy and delicious. So first of all, I am using broccoli with its stems on. This is very important. It makes a difference. Trust me. So look for the heads that are nice and dark green. So that's what we're using. We're going to start with trimming this part of the stem, 'cause it's usually too hard. Then we're going to stand it up and go around and kind of shave off the hard outer layer of the stem. Look at that. Nice and pretty already. All right, then we're going to trim off these leaves, if there are any. I'm going to kind of just go down like this and cut my floret into two equal size pieces, and this here gives me a good surface to place on my hot sheet pan, because that is how you get some good color on your broccoli. My oven is heated on very high heat, 500 degrees. Right, so from here, you guys, we need to give our broccoli a little bit of love. That means extra-virgin olive oil. This is what is going to transform broccoli into something super tasty. You need about five tablespoons. I'm going to use more because I love extra virgin olive oil. So five tablespoons, a good pinch of kosher salt. And I mean a good pinch, if you want it to taste good. So clean hands, toss, toss, toss, make sure that you get every single broccoli nicely coated with your tasty extra virgin olive oil. I'm using Private Reserve today, which you can find on themediterraneandish.com! Just hit the shop tab when you get there. I got a hot tip for you guys. Get your pan nice and hot in the oven before you throw your broccoli on. That's how you get super crispy broccoli. And believe it or not, the hard part is actually over. We're going to take this, throw it on our pan, put it in the oven, and like I said, my pan's already hot, so (Suzy clicks tongue), come with me. (quiet upbeat music) You want to do this quickly while the pan is nice and hot, right? So grab the broccoli, put it on the flat side. Ooh, sizzle! Yes, you want to hear it sizzle. It's going to crisp up really well. Make sure that every broccoli is touching the hot pan. Don't forget to put your glove back on. The pan is hot. Ooh, yeah. Whew, it's hot in there, 500 degrees. 10 minutes on one side, five minutes on the other. Stay with me. (quiet, upbeat music) Crisping up already! Loving it, loving it. Turn it over. (quiet, upbeat music) Five more minutes on the other side. Let's go! (quiet, upbeat music) Here it is. (quiet, upbeat music) And don't go anywhere, 'cause we're about to jazz it up some more, of course, Mediterranean-style. First of all, lemon zest 'cause I promised you a lemon roasted broccoli. Lemon zest and lemon juice. Feta cheese. (quiet, upbeat music) And if you like heat, a little bit of red pepper flakes. Oh, so good. I am actually going to use Aleppo-style pepper, which has a little bit of heat, but it also has some subtle sweetness. So good. (quiet, upbeat music) And final touch is tzatziki sauce.
