Hands down, best Carrot Cake I've ever had IN MY LIFE! I didn't follow this recipe for the frosting, instead I made some homemade cream cheese icing with one softened bar of cream cheese, 1/4 cup of softened of butter, 1 cup of confectioner's sugar, and a little vanilla and mix. That stuff tastes like cheesecake batter instead of gross, too sugary frosting. SO good! You might want to double that frosting recipe if you like a lot of frosting, though. :)
Best Carrot Cake Ever! Filled with carrots, raisins, pineapple, coconut, and nuts (ok, the raisins are my idea..not in the recipe!). Drizzled with a buttermilk glaze and then iced with cream cheese frosting. yum.
