Butternut Squash Soup
Ingredients: • 1 small-medium Butternut Squash • 200 ml Coconut Milk • 1-2 Red Onions • 1 Garlic head • 2 Tomatoes or 1 cup cherry tomatoes • 350 ml Vegetable Broth • 1 tsp grated Ginger (optional) • Olive Oil • Cilantro for garnish • 3 Carrots Seasoning: • 1 tsp each of pepper, cumin, paprika, thyme, rosemary, chili flakes Instructions: 1. Preheat oven to 380°F (193°C). 2. Prep veggies in a baking dish. Add seasonings and olive oil. Cover with foil. 3. Bake ~1 hour until golden. 4. Blend veggies with broth and ginger. 5. Transfer to pot on medium heat. Add coconut milk; stir 2 min. 6. Adjust seasonings. Garnish with cilantro, coconut milk, and chili flakes. Credits tiktok: dr.vegan
