Not only is this recipe delicious? Another amazing thing about it is that it is only four ingredients. The first most important of which is rice and we're starting with 3/ 4 cup of rice directly into our Pyrex. Second, a can of beef conseme. Do not use beef broth. Do not use cream of beef or anything. Beef console. I don't know why. It is the most important that you use the beef console but that what every other southerner before us has used so therefore that is what we are going to do. It has like a more concentrated flavor than beef broth does. Dump your whole can of that directly into your rice. Now, the third ingredient and really you could get by with making this three ingredients. The fourth is totally optional but for me, my favorite part about it. The third ingredient is butter. A whole stick. Hence the name why some people call this stick of butter rice. I'm taking a whole stick of butter, cutting it up into about tablespoon cubes and just putting it all over my dish and then for that fourth and final, to me, really important ingredient but it is totally optional because not very many people like it, mushrooms. I took fresh mushrooms and sauteed them but you could also do cans of mushrooms. That is what my godmother and my mama made whenever I was growing up. I love the mushrooms though. For me, it makes this dish but like I said, totally optional. I'm going to get some boil cover this up and put it in the oven and bake it until the rice is fully cooked through which is going to take about 35 to 45 minutes. Okay, 45 minutes later and here we are with this stick of butter rice. I mean, y'all. Look at this. I guess it's not really a looker with the mushrooms all scattered about but is it a taster? Y'all, this smells like my childhood. I love, I called it brown rice growing up. My aunt Patty, my godmother called it rice consume but whenever I got older, I learned that people call it also Stick of Butter Rice. I think that's such a fun name, Stick of Butter Rice because it has a whole stick of butter in it. It's just mmm so delicious. It's like the perfect side dish for any kind of grilled meat but especially pork tenderloin. Y'all, I just, I can't, my mouth is watering. Oh, it is so good. I haven't even dug in but it's just delicious. I'm going for an extra mushroom in my bite because I love the mushrooms in this but. Don't have to love them. I will still be your friend. It is just one of my all-time favorite, classic, easy southern rice dishes. If you have never made anything that I have ever told you to make, this is please just make this one. Yum.

A fourth a cup of white sugar, and a fourth a cup of cornstarch. Misk that together. Alright, we're going to bring over our corn and our extra egg here. This is Grandma's recipe we're making today. Two cans of sweet style cream corn going in. There we go. Of course, we need to scrape these. I won't forget and scrape all of that in there. This is exactly how Grandma made this. She had it written down and we will share that written recipe with you because this is the way she would do it. It's a simple beloved recipe but she had her methods and it always turns out so good which is why we are doing it just that way. Mm hmm. Okay. Gonna whisk this together so we can get that last egg yolk incorporated in here just like this. Okay. Now, this is an optional step that we're going to do next but in case you like to give your your corn pudding a little kick, we're going to add some green pepper right in there and mix that in And we're going to add one more thing to the top. But we're going to wait till we pour this into our casserole dish before we add that. So let me bring over our two quart size casserole dish. Just going to wipe down my surface here. Alright this is heavy. Ready to be poured in. So simple to make this. And who doesn't want corn pudding? Especially during the holidays. Mhm. Yum. Okay. Another optional step. Some red bell pepper. But again this is how Grandma did it. So we're just going to sprinkle this over the top. You can use as much or as little as you like. Or not at all. But we we just gotta do it the way Grandma does it. Okay this is ready to go in the oven. We're going to leave this uncovered and we're going to bake it at 400 degrees for 1 hour. Alright, Grandma's corn pudding is ready to go. I'm just going to add some chives to the top. Or am I? Mm hmm. Maybe I'll do it this way. Look at that. That's way faster, isn't it? Isn't that pretty? I love the color that those red bell peppers give it and this is going to have a nice kick to it because we put those green peppers in there. Doesn't that look great? Mm-hmm. And it smells incredible. This is the taste of home. I just love comfort food and it's the perfect time of for it, right? Hm? The best corn pudding right here.
