Italian Minestrone Soup - I used whole tomatoes (no salt added) and substituted penne. For the volume of veggies I used, I had to increase the chicken stock to 56 oz. Makes a vat so plan on freezing a batch. I wanted (wide) Italian green beans but found only canned so used fresh French green beans. Added some shaved Brussels Sprouts, but next time will try Kale.
