It is okay to get a little lazy on a Sunday evening. The shrimp egg rolls were from the box, as were the frozen stir fry veggies. The thin sliced beef and rice is fresh. A little prepared sauce and we were done in about 25 minutes. About $2.50 per serving and within our 500 calorie meal (the largest one of the day) So, we had a scoop of Breyer's Lactose free ice cream for a dessert ! It was a 1100 calorie day and all pretty tasty.

Have you ever experience an oh no moment? Late getting home from the city. Dinner? No problem, beef stir fry. Browned the beef, added the veggies and reached for the stir fry sauce...OH NO ! I know that there is a small bottle of it somewhere, but where. Now here in the pantry are to large bottles of Ms Yoshida's "do everything" sauce. I bought them thinking that the were stir fry but read the label and had not gotten around to using it. I was amazed at the results.

Sweet and Sour Pork Stir Fry. Cook to much pork roast and froze the excess? Cube or separate the pork, roll in cornstarch (to make next coatings), then in beaten egg/milk and finally in seasoned flour and baking powder. Cook at a higher heat setting until golden brown. Cook frozen stir fry mix with sweet and sour sauce.
It all started with baking a Devil’s Food Chocolate cake this afternoon. While the oven is hot and in the name of energy savings, I started looking through the freezer for something for dinner to make use of the already hot oven. Voila ! Here is some left over deli chicken, and bag of stir fry veggies. To that, there are a few Red Skin tators waiting to be eaten. Okay, it will be Mediterranean broasted veggie, tator and chicken on a cookie sheet…. topped with grated Parmesan cheese
