Massaged Kale Salad with Mango. Really tasty with coconut rice and glazed tofu. Notes: Make the dressing first, salt the kale, then massage the salt in with the dressing rather than adding what amounts to dressing and then pouring dressing over it. Skip the first olive oil/lemon juice/salt step for this; it's too much as written. Also, if you have a larger lemon, cut the lemon juice called for in half and add to taste.
