Roasted Tomato and Burrata Crostino with Sweet Blistered Tomatoes and Fresh Pesto- it’s crunchy, creamy and sweet! Ingredients: 4 slices of a baguette (cut diagonally) or ciabatta bread 1 cup cherry tomatoes 1 garlic clove 4 mini (2oz) Burrata balls 3 tbs olive oil Salt to taste Pepper to taste Pesto- to finish Basil leaves Method: 1. Add tomatoes, garlic, olive oil, salt and pepper to an oven/air fryer safe dish and air fry at 390 F for about 10 mins (alternatively roast in the oven but it will take a bit longer); 2. Slice your bread, dress in olive oil, salt and pepper on both sides and pan sear over med high heat until charred; 3. Smear the burrata filling on the bread, add your tomatoes with the juices, pesto, basil leaves and enjoy this indulgence! #burrata #blistered
