Tilapia is my favorite pieces of fish, mild and a very good value. Another plus, it doesn’t make your house smell fishy when cooked. The Tilapia is coated with shredded Parmesan cheese, sautéed till golden brown and topped it with a tomato-basil cream sauce. Fast and delicious, perfect for a weeknight meal. It took me a few tries to get the coating just right. But the final result is a light, flaky coating that nicely complimentes the fish.
