The Ramen Shop in Oakland, CA - Opened by some Chez Panisse vets. It's always packed...for good reason! I LOVE the food here! The MUST-TRY is the Shio Tonkotsu Ramen with chashu, shoyu-marinated egg, black garlic oil, chanterelle mushrooms, scallions & mizuna. The broth is rich & flavorful from twice-simmering with pig trotters for more than a day. It's like no other ramen broth I've had. Very special & delish! Ramen noodles are made fresh in-house.

He tasted ramen as early as in 1665 (in the early part of the Edo era which preceded the Meiji era). At that time, Zhu Shunshui, one of the greatest scholars of Confucianism in the Ming Dynasty of…

Ippudo in NYC —an import from Japan—that showed New Yorkers exactly what traditional Japanese-style tonkotsu pork broth should taste like.
