(AUSTIN) When I tell people that we have the best sushi in the world in Austin, Texas, I say that a little tongue-in-cheek because Tokyo rules sushi. However, I have shared Uchi with friends from around the world and they are always floored that Tyson Cole can do so much with so little. Tyson won a James Beard award in 2011 for his work at Uchi. Paul Qui is the Executive Chef of Uchiko and was the winner of Top Chef Texas in 2012.
