Harmony and symmetry were important in 18th century table settings. This festive table was laid in accordance with the instructions contained in Johan Winberg's 1761 cookbook.  On the table were Spanish ham, veal, turkey, glazed ham, aspics, artichokes, French beans and mushrooms with crayfish tails, and "eggs" that were actually fish balls.  It was fashionable then, as it is now, to make food look like something other than what it actually is.
