J Oliver Chicken Daube 2T EVO, chopped onion, 2 cloves garlic, 2 cm ginger, 1T thyme, red chili- all finely chopped, cinnamon stick, 1 tomato chopped, 14 oz canned chopped tomato, 1T fresh cilantro chopped, a bit of white wine, 1t sugar, 2 med potatoes, 1lb chick thighs, (extra salt in place of chick boullion)heat oil w spices, add everything except potatoes and chick- cook 5 mins, add potatoes and chick & cook thru ( approx 25 mins) serve w rice.
Honey Balsamic Baked Chicken Thighs - Rich chicken without a flour coating. Yum! Follow up after trying the recipe - delicious as the main dish on the first day. As "planned overs" on day 2, the seasoned meat was delicious as pulled chicken, after being shredded with a fork before simmering it in a gluten-free barbeque sauce.
Roasted Chicken Thighs - This came out really well. I loved the light lemon flavor and the crispiness of the chicken. I didn't have any olive oil so I subbed coconut oil instead and I thought it was even better. Will definitely make again.
