Jamaican Redd Bead Stew...hands down my most favorite! I make it at least once a month. The adaptions I make: I dice up 2 sweet potatoes, increase the coconut milk to a whole can, no water or veg broth, and add an additional can of diced tomatoes. Fire roasted tomatoes ROCK!!!
