Mama Isa's Torta al Testo: a traditional flatbread (from Umbria). "Testo" is the traditional heavy disc on which the torta bread is cooked. The Testo is made from aluminium and iron and placed directly on the stovetop. The Testo is stuffed with hand cut prosciutto crudo, fresh mozzarella or with salami and spinach or with arugula and mozzarella di bufala or with salsiccia, Italian sausages, and spinach. It's a perfect flatbread!
