This was THE MOST delicious frittata I’ve ever made - ever. The key ingredient being the cottage cheese, which thickens it up. You don’t have to use my add ins, you can sub in any veggie, mushroom, cheese, seasoning etc.
The thyme in this recipe makes the whole thing smell so wonderful, and cooking it in a cast iron skillet adds to the dish. Great for summer when there's usually a surplus of zucchini, but delicious anytime squash is available.
