coconut chicken (Great for shrimp too! just decrease time a little or it will be rubber!) Recipe calls for a sweet homemade dipping sauce, but I prefer a little kick. Try Sweet Thai Chili Sauce. Can get at most regular supermarkets. It has a wonderful sweetness but with a little heat from chilies. Also, if you don't have an Asian market, Ralphs (their brand) carries plain panko bread crumbs.
Oliver gave this one an A- I thought it could have used a touch more salt. Tasted a lot like fried chicken but it is breaded and baked. Delish! Marinating and baking the chicken is a healthy alternative for keeping it moist and flavorful.
