Smoked Brisket Empanadas. An incredible use for leftover smoked brisket and awesome appetizer idea for the holidays. Smoked brisket, sautéed vegetables, herbs and spices rolled in puffed pastry dough, and served creamy crème fraîche BBQ dipping sauce. So so good.
Smoked Sausage: Cook time 3 hours Serves: 4 Ingredients 2 pounds (or more) of fresh Italian sausage in casingswood of choice (I used hickory) Instructions Set the smoker for 250F and get it smoking with the wood chips/pucks.Place the Italian sausage on smoker racks at least a ½ inch apart.Smoke for 3-4 hours or until the internal temperature is 165F.
When baking potatoes there are things that I like. 1 Big baking potatoes. 2 Clean under cold running water. 3 Spread oil on the outside. 4 Sprinkle with salt. 5 inject the cooked potatoes (using an bbq injection syringe) with a mixture of melted butter and a little beer. 6 Serve them with your favorite toppings>more butter, crispy bacon, cheese, sour cream, pulled pork, smoked brisket, planked brie or whatever you like
