Raspberry Valentine Cake: 1 C apple purée ( 3 large golden delicious apples; 1 T lemon juice; 1 T water); ½ C softened palm shortening ½ C runny honey; ⅔ C coconut flour; 1 tsp baking soda; ½ tsp salt; 2 gelatin eggs (2 T gelatin, 2 T lemon juice, 2 T just boiled water) | Frosting: 1 C palm shortening; ¼ C coconut butter; ½ C coconut cream; ¼ cup runny honey; freeze dried raspberries to decorate
Red Velvet Cake -An amazing recipe!! This cake was SO moist. I changed a few things: only used 1/3 c of cocoa, 1 oz of red food coloring and 2 oz water. On the icing I added an extra 4 oz of cream cheese and it was perfect, not too sweet as the cake is very sweet. Also, only did two layers of cake. Mmm...I am not a huge cake person, but this cake was scrumptious!!
