This dish has fewer than 20g of total carbs—about half of what you’ll find in classic bread-based casseroles. Greek yogurt, eggs, and cheese pack a mighty protein punch, while a touch of bacon seasons to perfection. The strata is best if allowed to soak overnight. Not only does this build in make-ahead convenience, it also allows the bread to fully absorb the egg mixture—yielding a creamy texture inside, while the top bread pieces get delightfully crisp.

Amish Breakfast Casserole from Food.com: This is a recipe that I found in Taste of Home Magazine. This is a hearty filling breakfast and so tasty!!! You can change the bacon to ham or sausage and add red/green pepper if you like.

Mini Bacon Egg Cups -Yep, bite sized bacon and egg awesomeness. Simply wrap your muffin tins with bacon, fill with seasoned whipped eggs (and maybe some cheese?), and bake at 350* for 30-35 minutes. I'm going to try these, but I think I'll partially cook my bacon first so that it comes out a bit more well done and possibly not quite so greasy. I will do this for breakfast today.
