GUYANESE CHEESE PIES 2 cups grated (sharp) cheddar cheese (get the best you can) 3 eggs, room temperature 3/4 cup whole milk 1/4 teaspoon table salt 1/4 teaspoon freshly ground black pepper Preheat oven to 350 degrees FArrange each piece of cut pastry into muffin panRefrigerate the pans for 10 minutesBake pies for 25 - 30 minutes or until golden. Cool pans on wire racks for 5 - 6 minutes then remove pies from pans and continue to cool on wire racks.
Just found a bottle of Casareep my mother-in-law gave me. It's used to make a traditional Guyanese dish -the pepperpot. (Jeremy's grandpa was born in Guyana so this is a family tradition). Guess I'll have to try it out soon. Recipe from JehanCanCook.com
