Corn Casserole 1 can whole kernel corn, drained 1 can creamed corn 2 eggs beaten 1 stick butter, melted 4 heaping T. all purpose flour 2 T. sugar 1/4 C. diced green pepper (you can use red, I only had green) 1 C. whole milk 1/2 C. shredded cheddar cheese 1/4 tsp each salt and pepper Combine all ingredients and pour into a greased casserole dish. Bake at 350 degrees for 1 hr. 20 min.
SCALLOPED CORN from Janet's Appalachian Kitchen.... In a bowl combine... 15.25 oz. can whole kernel corn (drained), 14.75 oz. can cream style corn, 2 green onions (chopped), 2 eggs (beaten), 20 Ritz Crackers (crushed), 2 T. butter (melted) 1 C. shredded sharp cheddar cheese, 1/2 tsp. salt & 1/2 tsp. pepper. Pour into a lightly greased 9x13 baking dish. Bake at 350 degrees for 40 minutes. Remove and top with 1/4 C. French Fried Onions (crushed). Return to the oven for 5-6 minutes.
Baked Cream Corn 6 slices bacon, chopped Cooking spray 3 c. corn kernels (fresh, canned, or frozen and thawed) 1/4 c. all-purpose flour 2 c. shredded Cheddar 1 jalapeño, minced 1 tbsp. sugar 2 large eggs, lightly beaten 1/4 c. melted butter 1 c. milk kosher salt Freshly ground black pepper Bake 1 hr. at 325, then cool for 20 minutes to firm up.
Corn Csserole- 1 (15 1/4 oz) can whole kernel corn, drained 1 (14 3/4 oz) can cream-style corn 1 (8 oz) package Jiffy corn muffin mix 1 cup sour cream 1/2 cup butter, melted 1 to 1 1/2 cups shredded Cheddar Preheat oven to 350˚F. Grease a 9- by 13-inch baking dish or large casserole dish. Mix together the corn, Jiffy, sour cream and butter in a large bowl. Stir in the cheese. Pour into the prepared pan. Bake for 55 minutes, or until golden brown and set. Let stand 5 minutes before serving.
Bacon, Butter, Cheese & Garlic: Corn Casserole:: We really thought this was great!! I didn't change anything, but someone commented that they put some cooked bacon, sautéed onion and smoked Gouda with the cheddar. I will try that next time.. It's a " keeper"
