Cheesy Quinoa Cakes with a Roasted Garlic and Lemon-maybe try with polenta instead of quinoa

This is my go-to recipe when i have a "mac n cheese" craving.  Easy and quick to make, very few ingredients.  For the pasta, I use Trader Joe's organic brown rice fusilli.  I also replace most of the vegan margarine with a little veggie broth or plant-based milk.  I then add peas, broccoli and even hot sauce.  Yum!!
