I saw a recipe for this Chorizo-Chestnut Stuffing and I just died. I'm making it tomorrow and I'm so thrilled! Chorizo is my favorite. I think this dish is going to be a big hit-- even though I don't know how chestnuts taste! (Or how to prepare them even lol)

Avocado Chorizo Sweet Potato Skins- personally I think you can use any meat you want for this or skip the meat and just top your skins with homemade guac!  or forget that and just make baked sweet potato fries with fresh rosemary and sea salt.  Do whatever is least stressful and have fun!!

A recipe for this Italian favorite was in Vegetarian Times this month. We made it for dinner and it was fantastic!  The seasoned Roma tomatoes are cooked for about 30 minutes and then the eggs are placed in 'dents' to help them hold their form. Cover and allow to steam for about 10 minutes or until done to your liking.  This will definitely be a repeat dish.

Bubbly Bake --- All you need: 1 can Pillsbury Grand biscuits (cut into 4's), 1lb Jimmy Dean ground sausage or any light sausage (pre-cooked in a skillet), 1 bag shredded light cheddar cheese, 1 carton eggs--- Bake at 350 degrees for 15 minutes and enjoy the amazingness!  Variations: Drained can of green chilies or mushrooms.
