G is for Gumbo & is a dish that originated in So. La. during the 18th century. Start with a roux of flour & some type of fat. The color & underlying flavor of gumbo come from this roux, which is stirred continuously until it turns a rich caramel color. Add the Cajun Holy Trinity (bell peppers, celery & onions) & okra, shellfish & maybe Andouille sausage & chicken. Gumbo combines ingredients & culinary practices of several cultures (West African, Creole, French, Spanish, German, & Choctaw).
