Mexican Meatloaf 2 lbs ground hamburger meat 12 oz chorizo with casings removed 1 whole onion chopped 3 cloves minced garlic 3 roasted chopped green chili's with skins removed 1 ear roasted corn (cut roasted corn off cob) 4 corn tortillas ground in food processor 1/2 cup chopped cilantro 2 table spoon Mexican seasoning Mix ingredients and shape to loaf. Bake at 400 degrees for 1 hour in a metal pan. Top with ranchero sauce (favorite salsa), shredded cheese and broil to melt cheese.
