Bleu D Auvergne AOC 50% - is a respected AOC cheese. It was first created in 1854 by a Roquefort maker and is very popular among cheese lovers all over the world. It is made from cow's milk and has 50% fat content. Penicillin Roquefort is inoculated into the milk. Bleu D' Auvergne is spicy and salty with a hint of wild flowers that gives it quite an Earthly taste. It ages for about a month before it is sold on the marketplace.

Brebis du Lavort is, despite its rough-hewn exterior, a fairly new cheese, albeit one with an ancient provenance. In 1989, chef Pierre Troisgrois and cheese maker Patrick Beaumont, of Fromagerie de Terre Dieu in the Parc Naturel Régional Livradois Forez, joined forces to revive a recipe of the Auvergne region. The recipe they based it on came from a peasant named Guillaume, who dedicated his sheep’s milk brebis to his knight, the Baron Lavort, who fell in battle during the Spanish Crusades.
