Tindola, Indian Perrenial Cucumber, Miniature Cucumber, Ivy Gourd, Scarlet Gourd (Rau Mnh Bt) - Coccinia grandis, Coccinia indica - A popular vegetable (called Tindola) in India. The fruits are only 2 or 3, with a very nice scarlet red interior. Rich in beta-carotene, the fruits are used to prepare stuffed curries, stews, pickles, salads and stir fries. Green fruits are crunchy and make beautiful decoration on salads. Ripe fruits are soft, bright red, can be eaten raw.
