Parmesan Hash Brown Cups | 3½ cups shredded potatoes (rinsed & squeezed dry in a towel), ½ cup grated parmesan, 1 tsp salt, ½ tsp black pepper, 2 tablespoons olive oil - Preheat oven to 180C. Grease 12 muffin tins. In large bowl, combine potatoes, cheese, salt, and pepper. Toss lightly with a fork. Drizzle on olive oil. Toss again until well combined. Spoon mixture (press firmly with back of spoon) into 12 muffin cups. Bake for 60-75 minutes in lower third of oven. Let rest for 5 minutes.
