Crispy polenta cakes with mushrooms, spinach and peppers.    I make  my own version of this dish I’ve had at several restaurants. You can use prepared polenta in a tube to make this very easy.  1. Sauté container baby bella sliced mushrooms, half diced onion and one diced red pepper about 5 minutes in olive oil.   2. Preheat broiler and slice polenta into one inch slices.
