watermelon grilled cheese with nut crumble: Watermelon goes great with salty cheese. Cut 1/2 inch slices of melon. Top them with a little bit of mozzarella or young cheddar and add to a grill pan or your barbecue for a couple of minutes. Remove from the grill, drizzle some olive oil on top and sprinkle with fresh herbs and chopped pistachios.
These pancakes work even better if you make the batter a day ahead and chill it over night. Just whisk to combine again before cooking. We used an individual crepe pan, but you can make one twelve-inch pancake in a cast-iron skillet and serve it cut into wedges.
