PLANTAIN CHIPS peel and thinly slice (lengthwise) 2 green plantains. Preheat oven to 350F. Lightly coat a baking sheet with olive oil. Arrange plantains in a single layer on the baking dish. Spray (or drizzle) about 2 tbsp olive oil on top. Season with salt. Bake 15 minutes, or until golden brown and crispy. Enjoy plain or with salsa or ceviche.
MULLED APPLE CIDER. In a large pot, combine 4 cups apple juice or cider, 2 cups water, 2 cinnamon sticks, 1/8 tsp ground cloves, 1 orange, sliced (skin included) and 2 tbsp brown sugar (optional). Bring the mixture to a boil, and then reduce the heat and simmer for about 15 minutes.
