After a wander through Beatrix Potter’s home we’re ready for a little dinner snack, non? Carrot Cake Bars: Mix     1 cup rolled oats,      1/2 cup of water,      about ½ cup grated carrots,      2 TBSP raisins,      2 TBSP grated coconut,      ½ tsp cinnamon,      pinch salt,      honey (to taste, optional).  Add 1/2 cup water until everything is well combined.  Mixture should be a very thick batter.  Press in parchment lined 8 x 8.  Bake 20-25 min @ 380 til top is slightly browned. Cool & cut in slices. gm
