Butter Bean and Artichoke Dip:
- 1 Can (240g) Butter Beans (Drained & rinsed)
- 1/2 Cup Marinated Artichoke Hearts (Drained)
- 3 Tbsp Tahini
- 2 Tbsp Lemon Juice
- 2 Tbsp Water or Marinade from Artichokes
- 1-2 Cloves Garlic
- Pinch of Salt and Pepper
Optional Garnishes:
- Olive oil drizzle (omit for oil-free)
- Chilli powder
- Chopped Parsley
1. Place all dip ingredients into a food processor and process until smooth. Add more marinade/water if needed.
2. Transfer to a serving bowl and garnish. Serve with crackers, pita bread, falafels or veggie sticks.
