So freaking easy people! Saute some shallots (or onions) till soft, add a chopped up butternut squash, cover with chicken stock. I added some thyme, Bittman suggests rosemary. Simmer until things are generally soft, then blend until velvety smooth. While all this is going on bake some prosciutto, or fry some bacon, or skip it totally. Top the soup with bacon and mix in some sour cream (totally optional). This tastes fantastic and is SUPER easy.
