Gluten-Free Flour Tortillas: These are delish! I substituted coconut oil for the vegetable shortening, raw honey for the sugar and arrowroot powder for the tapioca starch (lower glycemic and more candida diet friendly.) Even made some using flower shaped cookie cutters for my kindergartener's lunch! :) I don't have a tortilla press, yet a dusted rolling pin works fine.
