Paleo Zucchini Fritters | stupideasypaleo.com *NOTE FROM RACHEL: These were tasty, but did require quite a bit of prep, including grating the zucchini (definitely use a food processor!), then squeezing/draining the zucchini. I used a nut milk bag for the squeezing/draining process. Making a double-batch with the giant zucchini I had on hand, my 10 cups of grated zucchini shed about 3 cups of liquid! I also used a couple tsp of Old Bay seasoning for the double batch.
Greek dressing recipe: I didn't have any red wine vinegar on hand and a site recommended using cider vinegar. Maybe that is what made it taste more like a sweet italian dressing. Either way it was really, really good!!
