Zesty Quinoa Salad - sooooo good and easy. I nixed the black beans and used 1 1/2 limes. Letting it sit in the fridge made a big difference (was very salty at first… not at all after a few hours). Also didn't have cilantro… but not sure I missed it!
Red Shallot Kitchen: Chicken Piccata. I omitted the capers and seasoned the chicken with season salt. I also used lemon juice instead of fresh juice, so I added some sugar to the sauce at the end to cut out some of the acidity. I really love this chicken.
