Grilled Swordfish With Peach Salsa 2 swordfish steaks Salt & pepper 1 large fresh peach, peeled & diced 1 large tomato, cored, seeded & diced 1/4 cup red onion, finely chopped 1 large clove of garlic, finely chopped 4 tablespoons fresh cilantro, chopped Juice of one fresh lime Grill: med/high heat. Season fish with salt & pepper. Grill. Combine peach, tomato, onion, garlic, cilantro & lime juice. Refrigerate. Allow flavors to meld. Top swordfish with salsa & serve.
