Cucumber Salsa I can never get enough cool crisp side dishes. Give me some mason jars and fresh produce and I will fill them with as many salads, salsa's and dips as possible. Since Cucumbers are my absolute favorite, this dish hit the spot. Where we live in Southern California, one of the most popular dishes are fish taco's. This salsa goes SO nice with fish taco's. It is also good on it's own.
