Persian Tofu-chickpea Frittata (V, GF): Has an egg texture that personally isn't my favourite (but pleased my guests) and also a funky aftertaste that takes getting used to. Easily seasonable, though! Great with cashew cheeze!

I love love love these little gems! I can not quit making them. I have used cherry, romas and beefsteaks. So FULL of flavor and so many things you can do with them!!! I pull the garlic out after an hour so in the oven so they dont burn. YUM!!
