Eastside Fizz In a cocktail shaker, muddle 5 thin slices cucumber, 1 1/2 Tbsp. simple syrup, and 10 mint leaves. Add 2 Tbsp. fresh lime juice and 1/4 cup dry gin or vodka. Shake with ice. Strain over rocks in a tall glass. Top with club soda. Garnish with a cucumber spear.
