This Vegan Curried Pasta Salad is ready in under 30 minutes and is full of fresh vegetables and plant protein. Perfect for cold lunches or summer cookouts!

Notes: I added chicken (cut into small pieces, salt and peppered it, coated it with a little salad dressing when cooked through.) I also omitted the sesame seeds, added scallions, and subbed coconut aminos for the soy sauce. Put desired amount of salad in a tupperware with dressing and shake it up before serving.
