Lemon orzo with mint and feta. This is BRILLIANT. I leave out the cucumbers because the rest of flavors drown it out, and the crunch is really more of a distraction than an addition. I could eat this everyday. Another staple to add to my easy-and-delicious list.
Cucumber salad. Greek yogurt, dill, lemon juice, salt and pepper. Healthy Yummy Mummy - This is a super quick healthy side salad. The original post doesn't have measurements but the dressing can easily be made to taste. Yum!
