Oven Roasted Chicken. Preheat oven to 400 degrees Ingredients: 1 Whole chicken cut into 8 pieces or 8 favorite chicken pieces. 2tbsp soy; 1 tb brown sugar: 2 tbs. red wine vinegar; 3 tbs. olive oil; 4 Shallots chopped; 2 cloves garlic minced and handful of chopped Parsley. Mix all ingredients in a large bowl, add chicken and toss until well coated. Remove from Marinade and place chicken skin up in a large roasting pan. Roast for 30 minutes turn chicken over and cook 10 more minutes.
